I love nothing more than coming up with new ways to make healthy foods delicious and fun. I wanted to share these recipes with you as they my current favourite and I eat them almost daily! They are so easy to make and are a really easy way to get more super foods in to your diet.
Now, it is up to you if you want to serve them in a little glass cup or not. But for some reason I enjoy eating them so much more when I do!
So, without further delay, here they are...

MY 4 FAVOURITE IN-A-CUP SNACKS
CREAMY CHIA PUDDING
This has become my favourite go to snack. I love to make a batch of it which I can keep in the fridge to have whenever I want. There are so many ways to eat chia pudding. You can eat it on it's own, mix it in with porridge, or add fruit, nuts or shredded coconut.
RECIPE
+ Add 1/2 cup of chia seeds to a glass jar or large bowl
+ Cover with 1 1/2 cups of liquid (I use almond milk)
+ Store it in the fridge overnight (I like to stir mine after about an hour to help the chia seeds absorb the liquid)
+ In the morning, your chia seeds will be plump, soft and chewy and ready to eat
RAW CHOCOLATE MOUSSE
This chocolate mousse is such a special treat. It is rich, creamy and absolutely delicious. Whenever I am having a chocolate craving I whip myself up a batch of this, rather than reaching for something packaged and high in sugar.
RECIPE
+ In a blender add the following; 1/2 a banana, 1/2 a small avocado, a heaped tablespoon of raw cacao powder and about 1/4-1/2 cup of almond milk depending on the consistency you want
+ Blend until smooth
THE VERY GREEN SMOOTHIE
I tend to go through 'phases' with foods, and this green smoothie concoction is my current favourite. I came up with this recipe one weekend when I was having an intense craving for greens. I simply threw in to a blender whatever I had in the fridge and this was the result. This drink is so refreshing, nutritious and gives you a big burst of energy.
RECIPE
+ In a blender throw in the following; 1 green apple, 1 small cucumber, a big handful of cos lettuce, a small handful of kale (stems removed), 1/2 of a small avocado, 1 small lemon, a handful of parsley
+ Add 1-2 cups of water and blend
+ Depending on the power of your blender you may need to blend it for a while.
+ You want to ensure all the greens are cut up finely so that your result is a smooth and creamy smoothie
WARMING QUINOA PORRIDGE
I love the standard porridge made with oats, but whenever I eat it, it seems to sit like a lump in my stomach and make me feel really tired. So I decided to try substituting my oats for quinoa. The result? A lighter, fluffier, gluten free porridge that has a beautiful earthy and rich flavour.
RECIPE
+ Rinse 1/2 cup of quinoa under water and drain well
+ Add the quinoa to a pan, cover with 1 1/2 cups of liquid (you can cook it with water, but for extra creaminess I cooked mine with almond milk, or substitute a milk of your choice)
+ Add a teaspoon of cinnamon
+ Add a teaspoon of cinnamon
+ Bring the liquid to the boil and then turn down to a simmer
+ Continue stirring as the liquid absorbs, and be careful of the temperature so you do not burn your milk
+ Once the liquid is absorbed take the pan off the heat. Cover it with a lid and allow it to sit for 10 minutes
+ Fluff it with a fork, and to it whatever you want. You can anything to it but my favourite toppings are are chopped apple, banana, almonds, dates, chia seeds, or coconut

DeleteThe first three I make myself, even your smoothie is similar to mine. Haven't tried the warming quinoa porridge, but will definitely be making soon. I adore my smoothies every day with a fresh made juice (usually green but sometimes a carrot/beet/lemon one rocks my tastebuds). I also adore a quick and simple guacamole with veggie sticks. DeleteThere is something special about in-a-cup snacks, especially when eaten with a favourite tiny teaspoon! Avocado pudding/mousse is still my go-to recipe for prompting others to question what can & can't constitute a dessert! Lovely Connie x
